牛刀包丁について

日立金属で生産されている安来鋼の一つで、一般的に刃物に使われる鉄鋼は青紙鋼と白紙鋼が使用される場合が多いが、その中でも高価で鉄鋼の最高峰とも呼ばれるのが、青紙スーパー鋼です。

柄には高級木材の紫檀を使用しており、見た目も艶があり美しく水に強いので末長くご使用いただけます。八角形の形で握りやすく、手に馴染みます。

日本製のステンレス鋼材。医療用のメスやナイフなどにも用いられ、錆などに強い耐蝕性をもつ。耐摩耗性と鋭い切れ味が特徴で非常に研ぎやすく、軽さもあり扱いやすいステンレス鋼材です。

引き包丁はお肉の筋取りはもちろん、スライス(薄切り)にも適している便利な包丁です。長さがあるため１回で引き切ることができます。
